Grilled Steak & Cajun Asparagus

Anybody who knows me, knows that a juicy grilled steak is my FAVORITE meal on this earth!

It was one of those things that I never attempted though, because for some reason grilling food was so intimidating to me. I don’t know why, but it seemed almost like a foreign language to me so I just stuck to making my steaks in a skillet or the oven. 

Those steaks were good, but they just weren’t the same, ya know?

That all changed when I met my mother-in-law.

Either the first or second time that I met her, she cooked me the absolute best steak I’d ever had. 

Me and my husband were long distance for 6 months so I had ample time to dream about that steak, enough that when I moved to Illinois for good I was finally ready to do it for myself!

I was pleasantly surprised to find out that it was a LOT easier than I thought!

Ingredients:

  • Ribeye Steak
  • Asparagus
  • Garlic Powder
  • Lawry’s Seasoning Salt
  • Montreal Steak Seasoning
  • Cajun’s Choice Blackening Seasoning (I can’t find this most places, so I also use Weber N’Orleans Cajun Seasoning)
  • Butter
  • Vegetable Oil

Directions:

1. Pour your charcoal into the grill, and then place pieces into a mountain so that they all light evenly.

2. Pour lighter fluid on charcoal and then light with lighter.

3. While you wait for the coal to warm up, you’re going to season your steaks.

4. I wish I had a definite amount of seasoning I use to tell you guys, but honestly I just go more for the look of the steak. Not too much and not too little. Once it looks like the picture above, then it’s perfect! I also season both sides of the steak.

5. Next, you’re going to cut the ends off of your asparagus. This is a personal preference because the ends are usually really tough and stringy and don’t take seasoning well.

6. Next rinse the asparagus off in a strainer and set to the side.

7. By this point your coals should be beginning to turn white. Spread them slightly with the most, and hottest pieces in the middle and not as many around the edges. 

8. Place the grate on the grill, and let it heat up for about ten minutes.

9. Place your steaks on the outer edges of your grill. You should hear a nice sizzle that signifies that the grill is hot enough.

10. After 10 minutes of cooking (untouched, so you get nice grill lines) flip the steaks over to the other side.

11. While your steak is cooking, put a pat of butter, a little bit of oil and your asparagus in a skillet.

12. Season the asparagus generously with the blackening seasoning.

13. Begin cooking your asparagus on middle to high heat, continuously moving with a spatula to avoid burning.

14. By this point, your steaks should be ready to be put on the middle of the grill to add a little bit of char. Side note: Make sure you watch the steaks, because they can burn quickly.

15. Once your steak is charred to your liking, you can remove them from the grill. 

16. Your asparagus should also be about done, by this point so you can go ahead and plate this delicious meal and enjoy!
